Alkaline Greek Salad

Ingredients: 

  • Red Tomatoes 4 plum tomato 
  • Cucumber, with peel, raw 1/2 cucumber (8-1/4") 
  • Peppers, sweet, red, raw 1/2 medium (approx 2-3/4" long, 2-1/2" dia) 
  • Green Bell Pepper 1/2 medium (approx 2-3/4" long, 2-1/2" dia) 
  • Red Onions 1 onion 
  • Green Olives 1/2 olive 
  • Olive Oil, extra virgin 1/2 cup(s) 
  • Lemon juice, raw 1/4 lemon yields 
  • Ground Oregano 1 tsp(s) 
  • Dried Parsley 1 tsp(s) 
  • Apple Cider Vinegar 1 tsp(s) 

Instructions: 

Chop vegetables and place in a large bowl. In a shaker combine the olive oil, herbs, lemon juice and apple cider vinegar. Shake well and pour over the yummy alkaline salad. Toss and top with a little organic feta cheese or vegetarian cheese (optional).
