Alkaline Grilled Eggplant (on a bed of Rice)

Ingredients: 

  • Rice, brown, long-grain, raw 1 cup(s) 
  • Eggplant, raw 2 eggplant, unpeeled (approx 1-1/4 lb) 
  • Olive Oil, extra virgin 2 tbsp(s) 
  • Cumin Seed (ground) 1 tsp(s) 

Instructions: 

Cook rice according to directions. Cut eggplant into thin slices. In a bowl combine olive oil, salt, pepper and cumin. Whisk together with a fork. Dip each side of the eggplant into the oil mixture. Place in grilling pan on medium for about 4 minutes per side. Serve on bed rice.
