Alkaline Lovely Lentil Soup

Ingredients: 

  • Lentils, raw 1/3 cup(s) 
  • Organic vegetable broth 2 cup 
  • Red Tomatoes 2 cup(s), chopped or sliced 
  • Garlic, raw 1 clove(s) (minced) 
  • Onions, raw 1/2 slice, medium (1/8" thick) 
  • Lemon juice, raw 1 lemon yields 
  • Basil, fresh 4 tbsp(s) 
  • Cilantro 4 tbsp(s) chopped 
  • Dried Marjoram 1 tsp(s) 
  • Fresh Thyme 1 tsp(s) 

Instructions: 

Put lentils in a pot filled with vegetable broth and onion. Boil, then reduce heat and simmer for and hour or until lentils are soft. While still hot, put lentils in blender with the remaining ingredients and blend well. Heat again for 10 minutes. Spoon into bowls and top with a little vegan Parmesan cheese if desired.
