Ingredients: 

  • Raw Carrots 1 cup(s), strips or slices 
  • Parsnips, raw 1 cup(s) slices 
  • Potatoes, red, flesh and skin, raw 2 potato medium (2-1/4" to 3-1/4" dia) 
  • Brussels sprouts, raw 1 cup(s) 
  • Onions, raw 1/2 cup(s), chopped 
  • Dandelion greens, raw 1 cup(s), chopped 
  • Basil, fresh 6 leaves 
  • Himalayan Salt 1 tsp 
  • Fresh Thyme 1 tsp(s) 
  • Black Pepper 1/2 tsp(s) 
  • Green Bell Pepper 1 cup(s), chopped 
  • Mushrooms, white, raw 1 cup(s), whole 
  • Olive Oil, extra virgin 4 tbsp(s) 

Instructions: 

Add vegetables to greased baking sheet. Sprinkle with all the spices. Drizzle with extra virgin olive oil. Add a little salt and pepper. Cook for about 40min at 375F until browned.
